Cheddar Bacon Biscuits

6 slices of bacon, cooked and diced
2 cups all-purpose flour
1 TBS baking powder
2 tsp sugar
3/4 tsp ground pepper
1 stick cold butter, plus 2 TBS melted butter
3/4 cup shredded sharp cheddar
1/4 cup grated Patmigiano-Reggiano
3/4 cup buttermilk

Preheat oven to 425 degrees.

Whisk flour, baking powder, salt sugar, and pepper.  Cut in cold butter until pea-size crumbs form.  Stir in cheeses and bacon.  Stir in buttermilk until dough just comes together.

Turn dough out onto floured surfaced.  Knead several times.  With rolling pin flatten to 1/2-inch thickness and dough roughly forms an 8" x 10" rectangle.

Place in greased cast-iron skillet.

Brush tops with melted butter.

Bake until golden brown on top.
