Protection against the cold

I prefer to think of these as insulation...a little extra padding to keep me warm.


Chewy Chocolate Cookies

12 oz bittersweet chocolate, chopped
1 stick sweet cream butter
2/3 cup all-purpose flour
1/2 tsp baking powder
Pinch of salt
4 eggs
2 1/2 cups sugar
2 tsp. vanilla extra
8 oz semi-sweet chocolate chips

Preheat oven to 350 degrees.  Line baking sheets with parchment paper.

Melt the bittersweet chocolate and the butter.  allow to cool slightly. Sift flour, baking powder, and salt together.

In another bowl beat the eggs, sugar and vanilla until thick and pale.  Stir in the melted chocolate and butter with the eggs and sugar.  Add the flour and semi-sweet chocolate chips next.

Drop tablespoons of the mixture onto the baking sheets.  Bake for 10 minutes.  Slide the parchment and the cookies onto racks and allow to cool.

As an extra bonus, IF you were traveling with the cookies you could use the parchment paper to protect them !! *L*

Well, I guess those are my new favorite cookies! I had to make a substitution: because I had no bittersweet chocolate, I melted a 12oz bag of Hershey's Special Dark choc chips and reduced the sugar to only 2 cups. I think next time I'll reduce the sugar to 1 1/2 cups - these are plenty sweet.

Thanks for the recipe. I hope I can control myself.

The bittersweet is the way to go, Lolly! They are not too sweet at all, rich, but not sweet.
